Got the smoker working perfectly for the first time
Spent 4 hours babying a brisket yesterday. Wrapped it, kept the temp steady at 225, and let it rest proper. When I pulled it off and sliced into it, it was perfect. Kids came running when they smelled it and even the picky eater demolished two plates. There's something really satisfying about feeding your family something you made from scratch over a fire.
