Just fired up the smoker yesterday. Did a 12 hour brisket and it was money. My neighbor came over with some beers and we just talked about life for like 4 hours while tending the grill. These are the moments right here. Smoking meat and solving the worlds problems with a cold one in hand.
12 hour brisket is the way. That's not even bragging at that point, that's just quality work. How many people did the neighbor bring over or was it just a casual thing? Grilling season is definitely the best season.
Just got my smoker out too! Haven't fired it up yet but I'm planning a pork shoulder next weekend. Any tips for getting bark really crispy without drying out the meat? I always struggle with that balance.

This is exactly why I love spring. Nothing beats the smell of a smoker going all day and the satisfaction at the end. Also an excuse to drink beer and pretend like you're doing something productive.
