Grilling steaks tonight, any tips for a reverse sear?

Picked up two nice NY strips from Costco and want to try the reverse sear method for the first time. Should I let them sit out for 30 mins first? Also wondering about temp - should I aim for 225 in the smoker area then sear hot on the other side? Any other pointers would help. Want to impress the family.

Definitely let them sit out, and don't skip that step. I do reverse sear all the time and it's a game changer for getting that perfect crust. Low and slow in the oven first, then a quick sear on the cast iron.
