Got a Weber Genesis like 5 years ago and it's been solid but lately I can't keep it consistent. Cleaned the burners, replaced the flavorizer bars, checked the seals. Still fluctuating like 50 degrees. Is it time to look at a new grill or am I missing something obvious? Don't want to drop 800 bucks if I can fix it.
When was the last time you cleaned the grates and the inside of the box? Five years is a long time and debris can definitely mess with airflow and heat distribution.
Sounds like a thermometer issue to me. Your actual temp might be fine but your gauge could be reading wrong. Grabbed a wireless meat thermometer for like 30 bucks and it solved all my problems.
My buddy had this exact problem with his Weber. Turned out the vents under the grill were partially blocked by dead leaves and dirt. Once he cleared those out it held temp perfectly again.
Genesis models are pretty solid but the flavorizer bars can warp over time which messes with heat distribution. Might be worth replacing those before anything else.

Check your burners first. I had the same issue with my Genesis and turned out one of the ignitors was going bad, wasn't igniting properly on one side. Took like 20 minutes to figure out.
