Smoked a 16lb brisket this weekend
First time doing a full brisket on my new smoker. Started at 5am, pulled it at 2pm and let it rest for an hour. The bark was perfect and it was so tender. Neighbors came over and the kids actually put their phones down to eat. Honestly this hobby pays for itself in family moments.
Pulled at 2pm means you got some solid rest time in there. Did you hit the stall? That's always where I lose my patience and start cranking the heat.
