Been watching videos all week and I'm ready to try my hand at smoking a brisket on the new offset smoker. Set it up in the backyard last weekend and got it all seasoned in. The kids think I'm insane for wanting to cook meat for 14 hours straight but this is happening. Will report back with pics. Pray for me guys.

That's awesome man. I've been wanting to try smoking for a while but haven't pulled the trigger yet. How long are you planning to let it go? I heard brisket takes forever.
Just finished my first brisket last month and honestly it was easier than I thought. The hardest part is not opening the smoker every 10 minutes to check on it. Resist the urge.
