Smoking a brisket for the first time tomorrow
Been watching videos all week and I'm nervous about this. Gonna start at like 10pm tonight to have it ready for lunch tomorrow. Got a 12 pounder and got my smoker all prepped. Wish me luck fellas. Will report back with how it turns out.
Starting at 10pm is rough but smart. Keep that smoker at like 225 and don't peek too much. The hardest part is just being patient and letting it do its thing. First one's always nerve wracking but you've got this.
