Smoking a brisket tomorrow morning for the family
Got my offset smoker all cleaned up and ready to go. Picked up a nice 12 lb brisket from the butcher, gonna start at 5 AM and let it ride till dinner time. Been doing this for like 3 years now and my family looks forward to brisket day more than Christmas I think. My 12yo actually asked if he could help me trim and prep it this time. Gonna teach him the basics. Anyone else grill with their kids?
That's awesome man. 12 lbs is a good size. How long you planning to smoke it? I'm always nervous about timing with a brisket. Did you trim the fat cap already?
Nothing beats homesmoked brisket. Just remember to let it rest for at least 20 minutes after it comes off. That's the step I used to skip and it changes everything.
