Got my kids to eat vegetables without lying about them
Took them to the farmers market and let them pick out whatever weird looking produce they wanted. They got some purple cauliflower and these tiny orange carrots. Roasted everything with a little olive oil and salt. They demolished the whole tray. Sometimes the trick is just letting them choose.
This is the way. When my four kids help pick the food out they're invested in actually eating it. We've had better luck with vegetables from that one trip to the market than months of me telling them to eat their veggies.
