My 8yo figured out how to disable screen time limits

So apparently my son found some YouTube video that showed him how to factory reset his iPad and bypass all my parental controls. I'm honestly impressed and horrified at the same time. Now he's watching stuff he shouldn't be watching at 2am. Does anyone else deal with this? I feel like I'm fighting a losing battle here.
