Anyone else's kids completely refuse veggies?

My 7 year old will literally starve before eating a carrot. We've tried the whole hidden veggie thing but I'm running out of ideas. My wife makes this cauliflower rice thing and mixes it with mac and cheese and he somehow doesn't notice. Otherwise he's living off chicken nuggets and pasta. Is this just a phase or am I doing something wrong here?

My oldest was the same way until I started letting him help me grill. Suddenly he wanted to eat the peppers and carrots we were cooking with. Might be worth a shot getting him involved in the cooking process.
