Best weeknight meals that don't require a PhD?
I've been doing more cooking since my wife started her new job. Tired of the same rotation of tacos, spaghetti, and chicken nuggets. The kids are getting bored and I'm getting bored. Someone recommend something that's actually good, doesn't take forever, and won't result in my family staging a revolt.
Sheet pan meals changed my life. Everything on one pan, in the oven for 20 minutes. We do sausage, peppers, potatoes. Minimal cleanup which honestly might be the best part when you're solo cooking most nights.
