Been drinking garbage coffee my whole life from the office machine. Decided to actually invest in a decent setup at home. Do I go french press or pour over? What's the least complicated way to not screw this up?
Don't overthink it. Get a basic espresso machine or a good pour over, some decent beans from a local roaster, and go from there. I started the same way and now I'm that guy at school pickup with my coffee in a nice cup. Small wins.
This is actually a great move. Having one thing that's just for you, something you invest time in, makes you a better dad because you're taking care of yourself. I did this with my patio setup and it completely changed how I feel about my day.

Finally someone else! I was drinking terrible office coffee for years and then I got a decent burr grinder and a pour over setup. Sounds bougie but it's actually not expensive and it's made my mornings so much better. Plus my kids think it's cool that dad has his thing.
