Anyone else smoke brisket? Just did my 4th one
Started this hobby during the pandemic and now I'm that guy with the offset smoker in the backyard. Did a 14-hour brisket run last Saturday, managed to sleep like 4 hours total but it came out perfect. The bark was insane. Got compliments from neighbors I didn't even know existed. Downside is my wife says the backyard smells like a barbecue joint permanently. Worth it though. My old man used to smoke meat and I never learned from him, so there's something about doing this that feels like I'm honoring that. Anyone got tips for wrapping? Still experimenting with butcher paper vs foil.
Started during the pandemic too huh. There's something therapeutic about tending a smoker for 12 hours while the kids are around. Beats being on your phone.
