Attempted sourdough for the first time

Started a starter like 5 days ago. Made my first loaf yesterday and actually turned out pretty decent. Still learning but the crumb structure looked right. My family ate half of it before it even cooled down. Trying again this weekend with some adjustments. Anyone else do sourdough? What's your timeline look like from mixing to bake?

That's awesome! Five days and you're already baking? I killed my first starter twice before I figured out the feeding schedule. What kind of flour did you use?

Pretty decent is selling yourself short if it actually turned out good. Sourdough is legit hard. My kids think homemade bread is some kind of magic and honestly I'm not gonna correct them.

This is the move right here. Once you nail sourdough you're basically unstoppable in the kitchen. My wife started doing this last year and now she won't stop. Send help.
