Been watching YouTube videos all week about smoking brisket. Got a 14 lb one from Costco and I'm planning to start it at like 5 AM Saturday morning. My neighbor just got a pellet smoker and he's been bragging about his results, so now I'm competitive about it. Wish me luck. Will update if it doesn't turn into a charcoal brick.
Love this energy. Smoking brisket is a weekend mission for sure. My tip is get a good meat thermometer. The stall is real around 165 degrees but it pushes through. Let us know how it turns out!
This is the kind of project that eats up your whole weekend and you absolutely love it. That's a good smoke time to teach the kids about patience too if they're old enough.
Good luck with that brisket! 14 lbs is a solid first timer size. Low and slow is the motto. Depending on your smoker temperature you're probably looking at 12-16 hours. Worth every minute though.

You got this. The YouTube research is half the battle. Keep your temperature consistent and don't mess with it too much. Biggest mistake first timers make is opening it up every five minutes to check on it.
14 lbs is a solid size to start with. You've got time to really dial in the temperature and not rush it. What kind of smoker are you using?
