Attempting smoked brisket tomorrow, need confidence boost
First time smoking a brisket. I've done ribs and chicken a bunch of times so I'm not totally lost, but I'm weirdly nervous about this one. Got a 12 pounder sitting in my fridge right now. Planning to smoke it low and slow, maybe 225 degrees for like 15 hours? Trimming the fat cap tonight. Anyone else get anxious before their first brisket or is that just me? Also if it comes out bad the family is still eating it right? It's meat, it's gonna be edible at worst.
You got this! The fact that you've done ribs and chicken means you understand the temp management which is the hardest part. Brisket is just a longer cook. Keep that smoke steady and don't mess with it too much.
First brisket is always nerve wracking but honestly if you nailed ribs you're already past the mental hurdle. What kind of smoker are you using?
