Finally attempted sourdough bread

Ive been watching videos and reading about this for like 6 months and finally started a starter this weekend. My wife thinks im crazy for wanting to keep yeast on the counter but shes intrigued. First loaf is gonna take 5 days so I'll report back but I'm already nerding out about hydration percentages and gluten development. Anyone else gone down this rabbit hole? Whats your favorite recipe?
