First time smoking a brisket, asking for tips before I commit
Never done this before. Got an old grill I'm converting to a smoker. Planning to do it next Saturday morning and have a bunch of neighbors over. Should I go offset firebox style or just use the grill with a drip pan? Also how long are we talking, like 10-12 hours? Don't want to mess this up in front of people. Any experienced guys have a preferred method?
This is on my list too. How long are you planning to go for? I've heard anything from 12 to 18 hours depending on the setup.
