Planning to smoke a brisket tomorrow morning for a family dinner. Never done it before. I've got a pellet smoker and watched like 15 YouTube videos already. Should I trim the fat cap before or after? And how often should I check on it? Don't want to mess this up in front of my in-laws.

Dude, low and slow is your friend. I'm not a brisket expert but I've learned that temp control matters way more than the technique. Good luck tomorrow, that's gonna be delicious.
