Why did I do this on a weekend with kids? No idea. Prepped Friday night, fired up the offset smoker at 5am Saturday. Fought to keep temps between 225-250 all day. The stall was real around hour 8. Wrapped it in butcher paper at 165 IT, pulled it at 203. Let it rest 30 mins in a cooler. Sliced it up and it was perfect. Bark was amazing. Family ate so much we have leftovers for days. My lower back hurts from standing there tending the fire but would 100% do it again.

Man, that's dedication. I smoke the turkey every year and the kids actually help now, but 14 hours is next level. Bet that brisket turned out incredible though.
