Woke up at 3am to fire up the smoker. Wife thought I was crazy but when that meat came out I knew it was worth it. Melted in your mouth. Kids actually ate it without complaining. Throwing another one on next weekend, this is becoming a thing now I guess.
14 hours is dedication. I respect the commitment to the craft. What temp did you hold it at and did you wrap it halfway through or go naked the whole way?
My wife gives me the same look when I fire up the smoker before sunrise. Worth it every time though.
3am start time is wild but I get it. That slow and low approach is the only way. Please tell me you had friends or family come try it because 14 hours of work deserves an audience.
