Smoked a brisket for 14 hours straight

Woke up at 4am Saturday to get the brisket on the smoker. Spent the whole day monitoring temperature, spritzing, adjusting vents. Burned through half a bag of charcoal and about 5 cups of coffee. My wife thought I was insane. But then we pulled it off and sliced into it and man, it was perfect. So tender. Had the whole neighborhood over for dinner and it was worth every minute. This is my third brisket and finally starting to understand the process. Gonna try a pork shoulder next month.
