Smoked a brisket for 14 hours straight yesterday
Woke up at 4am to get the fire going and didn't wrap it til the afternoon. Held it at 225 the whole time, used hickory and oak. It came out unreal. Daughter asked for second and third helpings which never happens. The bark was perfect and it just fell apart. This is the first time I've actually nailed it after like 6 attempts.
This is the kind of weekend mission I'm here for. Bet your family was losing their minds when they smelled that coming off the grill all day.
