Smoked a brisket for 14 hours, was it worth it?
Started the brisket at 6 AM Saturday morning. Woke up every 2 hours to check the temp, spritz it, rotate the whole thing. By 8 PM it finally hit 205 internal temp. Wife thought I was nuts for waking up all night but man, when we sliced into it Sunday morning and the whole thing fell apart like butter... that was the good stuff. Feeding 12 people at a family BBQ and everyone kept coming back for more. My back hurts and I need a nap but yeah, totally worth it.
Honestly if the answer isn't yes then why are we even doing this. A brisket that requires that much attention means you actually care about the result. Total worth it.
