Smoked a brisket for 14 hours yesterday. Totally worth it.
Woke up at 5am, got the smoker going by 6. Kept the temp at 225 degrees, wrapped it in butcher paper around hour 8. By 8pm we had this beautiful, tender brisket that literally fell apart. Kids actually asked for seconds which never happens. Made some homemade sides too - mac and cheese, beans, cornbread. Best weekend project I've done in months. The smell was insane.
Dude that's awesome, getting up at 5am to do that while the boys are still asleep is peak dad move. Bet your family demolished that brisket.
