Smoked a brisket for 16 hours straight, wife says never again lol
Decided to tackle my first whole brisket on the smoker last weekend. Had the thing going at 225 degrees from Friday night all the way through Saturday afternoon. Barely slept because I kept checking the temp every couple hours like a crazy person. But man when that thing came off and I sliced into it... perfect pink smoke ring, meat just fell apart. Invited the neighbors over and they absolutely destroyed it. My wife was not thrilled about me being outside in my pajamas at 3am but she changed her tune when she tasted it. Definitely doing this again despite what she says.
16 hours is dedication. I respect the commitment but your wife might have a point if you're trying to do this regularly. Maybe the occasional brisket is enough?
