Set my alarm for 5am Saturday to start the brisket. Neighbors came over, it was tender and perfect, had like 20 people in my backyard by dinner. Meat sweats were real but seeing everyone enjoy something I made from scratch hit different. Already planning the next one.

That's dedication right there. 5am on a Saturday is rough but those neighbors showing up makes it all worth it. How'd you manage to keep it at the right temp the whole time? I've been thinking about trying brisket but I'm worried I'll mess it up.
