Never done it before. Got a 14 pounder from Costco. Doing it overnight on my new offset smoker. Read like 47 different guides and watched YouTube videos till 2am. Setting alarms to check temp every couple hours. My brother in law is coming over which is both good because he's done this before but also stressful because he's going to judge me hard. Wish me luck fellas.
You got this. The nervous energy before smoking meat is half the fun. Just commit to not opening that thing up every 30 minutes like I did the first time.
14 pounds overnight is intense for a first timer but you got this. Keep the temp steady around 225-250 and resist the urge to open that smoker every 20 minutes. The hardest part is just letting it do its thing.
Costco briskets are solid quality for the price. What temp are you running and how many hours you estimating? Might be fun to follow your progress tomorrow.
Are you wrapping it in foil at any point or going full naked brisket? Also get yourself a good meat thermometer that doesn't suck, makes the whole thing less stressful when you actually know what temp you're hitting.
Nice choice on the offset smoker. Those give you way more control than the barrel types. My biggest tip: prep your wood the night before and have way more than you think you'll need. Nothing worse than running out halfway through.
