Smoking a brisket tomorrow and I'm nervous
Never done it before. Got a 14 pounder from Costco. Doing it overnight on my new offset smoker. Read like 47 different guides and watched YouTube videos till 2am. Setting alarms to check temp every couple hours. My brother in law is coming over which is both good because he's done this before but also stressful because he's going to judge me hard. Wish me luck fellas.
14 pounder overnight on a new offset is ambitious for first time. Are you planning to wrap it or just let it ride? The Texas crutch saved me on my first brisket.
