Got the 14 hour process mapped out, watched three YouTube videos, bought a pork butt to practice on. My buddies are coming over so no pressure or anything. I'm probably way overthinking this but I want to prove I can cook something besides burgers on the grill. Wish me luck. Will report back Sunday with either glory or failure.

YouTube prep is solid but real talk the first time you're gonna second guess yourself like four times at 2am. It's normal. Trust the process and keep the temp steady.
Respect the grind. Three videos is actually smart. I'd add wrapping in foil after about 6 hours if you haven't heard that tip yet.

This is a commitment but such a good one. The family is going to talk about your smoked brisket for months. Just make sure someone's actually awake to pull it at the right time.
